10 oz tomatillos (about 5 medium)
1 cup fresh cilantro leaves
1–2 jalapeño peppers (to taste)
Juice of 1 lime
3 garlic cloves
1/2 tsp salt
Instructions
Preheat your oven's broiler.
Remove husks from tomatillos and rinse under warm water. Place them on a baking sheet and broil for 5-7 minutes until blistered and slightly charred.
Allow tomatillos to cool, then add them to a blender with cilantro, jalapeños, garlic, lime juice, and salt. Blend until smooth but slightly chunky.
Taste and adjust seasoning as needed.
Transfer to an airtight container and chill in the refrigerator for at least 30 minutes before serving.
