  • 1 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 4 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

  1. Prepare the marinade by whisking together lime juice, minced garlic, chopped cilantro, olive oil, honey, cumin powder, salt, and pepper in a mixing bowl until well blended.
  2. Place chicken breasts in a resealable plastic bag or shallow dish and pour marinade over them. Ensure they are fully coated and marinate for at least 30 minutes (up to overnight).

  4. Cook chicken on the grill or bake for approximately 6-8 minutes per side until internal temperature reaches 165°F (75°C) and juices run clear.
  5. Let the chicken rest for about five minutes before slicing. Serve with lime wedges and your choice of sides.
