  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 2 cups sharp cheddar cheese, shredded (divided)
  • 1 cup whole milk
  • 1 small onion, diced
  • 1 cup bell peppers, diced (red, yellow, or green)
  • ½ cup sour cream
  • Fresh cilantro (optional)

Instructions

  1. Cook the elbow macaroni in salted boiling water until al dente (7-9 minutes). Drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef (5-7 minutes). Drain excess fat if needed. Add onion and bell peppers; sauté until softened (3-4 minutes).
  3. Stir in the taco seasoning; cook for 1 minute until fragrant.
  4. Pour in milk while stirring constantly to avoid lumps. Gradually add half of the cheddar cheese until melted and creamy.
  5. Mix in the cooked pasta and sour cream until everything is well-coated. If too thick, add more milk.
  6. Sprinkle remaining cheddar cheese on top and broil for 3-5 minutes until golden brown.
