  • 6 Garlic cloves, minced
  • 2 tbsp Fresh rosemary, chopped
  • 3 tbsp Extra virgin olive oil
  • 2 tsp Salt
  • 1 tsp Black pepper

Instructions

  1. Preheat oven to 450°F (230°C).
  2. In a bowl, mix garlic, rosemary, salt, pepper, and olive oil into a paste.
  3. Rub the seasoning generously over the prime rib.
  4. Place the roast in a roasting pan; sear in the oven for 20 minutes.
  5. Reduce temperature to 325°F (160°C) and roast for 1 to 1.5 hours or until the thermometer reads 135°F (57°C) for medium-rare.
  6. Rest for at least 20 minutes before slicing.
