Meatball subs are the ultimate comfort food, combining juicy meatballs, rich marinara sauce, and gooey mozzarella all nestled in a toasted sub roll.   • 1 lb lean ground beef
  • 1 cup plain breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups marinara sauce (jarred or homemade)
  • 4 sturdy sub rolls
  • 1 cup shredded fresh mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, parsley, salt, and pepper until well combined.
  3. Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes until golden brown and cooked through.
  5. In a skillet over medium heat, warm the marinara sauce. Gently add the baked meatballs and simmer for about 10 minutes.
  6. Slice sub rolls lengthwise without cutting all the way through; butter each side lightly and toast in a skillet until golden brown.
  7. Fill each toasted roll with three to four meatballs and spoon over marinara sauce. Top with shredded mozzarella.
  8. Broil under high heat for 2-3 minutes until the cheese is melted and bubbly.
