  • 4 large flour tortillas
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 4 strips bacon or 1 cup cooked sausage
  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup diced onions (red preferred)
  • 1/2 cup salsa
  • 1 avocado (optional)

Instructions

  1. Cook bacon or sausage in a skillet over medium heat until crispy. Drain on paper towels.
  2. In the same skillet, sauté onions and bell peppers until softened, about five minutes.
  3. Whisk eggs with salt and pepper in a bowl, then pour into the skillet over medium-low heat. Stir gently until softly scrambled, about three to four minutes.
  4. Assemble burritos by layering egg mixture, meat, cheese, salsa, and avocado on each tortilla. Fold sides in and roll tightly from bottom to top.
  5. Grill seam-side down in a hot skillet until golden brown on both sides (about two minutes each).
