  • 1 lb collard greens, washed and chopped
  • 1 smoked ham hock (or 4 oz bacon)
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp red pepper flakes
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse collard greens under cold water, remove stems, and chop into bite-sized pieces.
  2. Heat olive oil in a large pot over medium heat. Add onions and garlic; sauté until translucent (3-5 minutes).
  3. Add ham hock (or bacon) and chicken broth; bring to a gentle simmer for about 10 minutes.
  4. Stir in collard greens and red pepper flakes. Cover and cook for 45–60 minutes until tender.
  5. Remove ham hock; shred any meat back into the pot if desired. Season with salt, pepper, and lemon juice before serving.
