  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 1 cup mixed bell peppers (red, yellow, green), sliced
  • 1 medium sweet onion, sliced
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortillas (flour or corn)

Instructions

  1. Slice the chicken into thin strips; chop bell peppers and onion into bite-sized pieces.
  2. In a bowl, combine chicken strips with olive oil, garlic powder, cumin, chili powder, salt, and pepper. Let marinate for at least 15 minutes.
  3. Heat a large skillet over medium-high heat and add olive oil. Sauté onions and bell peppers until softened (5-7 minutes).
  4. Push veggies aside and add marinated chicken to the skillet. Cook for 8-10 minutes until fully cooked through.
