  • 1 lb Italian sausages (mild or spicy)
  • 3 bell peppers (1 red, 1 yellow, 1 green), sliced
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 tsp dried oregano
  • 2 tsp dried basil

Instructions

  1. Prepare your ingredients by slicing the bell peppers and onion, and mincing the garlic.
  2. In a large skillet over medium heat, add the olive oil and cook the sausages until browned on all sides (about 10 minutes). Remove from skillet.
  3. In the same skillet, add bell peppers, onions, and garlic. Sauté until softened (about 5-7 minutes).
  4. Slice the cooked sausages into bite-sized pieces and add them back to the skillet along with oregano, basil, salt, and pepper. Stir well.
  5. Reduce heat to low, cover the skillet with a lid, and let simmer for about 5 minutes.
  6. Serve hot over pasta or in sandwich rolls.
