  • 1 jar (16 oz) grape leaves, rinsed
  • 1 cup short-grain rice
  • 1 lb ground meat (lamb, beef, or turkey)
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1 medium onion, finely chopped
  • 1/4 cup lemon juice (freshly squeezed)
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat. Sauté chopped onions until translucent.
  2. Add ground meat and cook until browned.
  3. Stir in rinsed rice, parsley, dill, lemon juice, salt, and pepper; cook for an additional 2 minutes.
  4. Rinse grape leaves under cold water if using jarred; lay flat on a clean surface.
  5. Place about 2 tablespoons of filling near the stem end of each leaf; fold sides over filling and roll tightly from stem to tip.
  6. Arrange rolled grape leaves seam-side down in a pot lined with leftover leaves. Drizzle with olive oil and cover halfway with water.
  7. Cover and simmer for about 45 minutes until rice is tender.
