  • 2 cups ripe tomatoes, quartered

  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Wash cucumbers and tomatoes under cool water. Slice cucumbers into thin rounds and quarter the tomatoes.
  2. Peel and thinly slice red onion; soak in cold water for a few minutes to reduce sharpness.
  3. Chop fresh herbs (basil or parsley) and set aside.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. In a large bowl, combine cucumbers, tomatoes, red onion, and herbs. Drizzle with dressing and gently toss until well coated.
