  • 1 lb ground beef or turkey
  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup diced tomatoes (fresh or canned)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté onion and garlic until translucent.
  3. Add ground meat, cumin, and chili powder; cook until browned.
  4. Stir in black beans and enchilada sauce; simmer for 5 minutes.
  5. In a baking dish, layer corn tortillas on the bottom. Top with half the meat mixture and cheese; repeat layers.
  6. Cover with foil and bake for 25-30 minutes. Remove foil during the last 10 minutes to brown the top.
  7. Serve hot with optional toppings like sour cream or avocado.
