  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder

  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ½ cup nuts (walnuts or pecans) or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Grate the zucchini and set aside.
  3. In a bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, beat eggs and sugar together until combined. Mix in the grated zucchini.
