  • 12 no-boil lasagna noodles
  • 15 oz ricotta cheese
  • 4 cups fresh baby spinach
  • 8 oz mushrooms (sliced)
  • 1 medium zucchini (sliced thinly)
  • 2 cups marinara sauce
  • 2 cups shredded whole milk mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté sliced mushrooms and zucchini until softened (about 5 minutes).
  3. In a bowl, mix ricotta cheese with dried Italian herbs and a pinch of salt until smooth.
  4. Spread a thin layer of marinara sauce in the bottom of a baking dish. Layer with noodles, half the ricotta mixture, sautéed veggies, spinach, and mozzarella.
  5. Repeat layering with remaining ingredients: noodles, sauce, ricotta mix, veggies, spinach, finishing with mozzarella on top.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
