  • 4 medium sweet potatoes
  • 4 tbsp unsalted butter
  • 1/2 cup full-fat sour cream
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 1 cup grated sharp cheddar cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the sweet potatoes under running water.
  2. Place sweet potatoes on a foil-lined baking sheet and bake for about 45 minutes until tender.
  3. Once cooled slightly, cut each potato in half lengthwise and scoop out the flesh into a mixing bowl, leaving some around the edges.
  4. Add butter, sour cream, brown sugar, cinnamon, salt, and pepper to the potato flesh. Mix until smooth.
  5. Fold in cheddar cheese and half of the green onions. Spoon mixture back into potato skins and sprinkle extra cheese on top if desired.
  6. Bake at 350°F (175°C) for an additional 20 minutes until heated through and golden.
