  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 1 bell pepper (red or green), diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup yellow cornmeal
  • 1 cup water
  • 1 cup shredded sharp cheddar cheese
  • Sour cream (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef with chopped onion until cooked through. Drain excess fat and add diced bell pepper.
  3. Stir in canned tomatoes, chili powder, cumin, salt, and pepper. Simmer for about 5 minutes.
  4. In a bowl, mix cornmeal with water according to package instructions until smooth but thick.
  5. Spread the meat mixture in a baking dish and pour the cornmeal batter on top. Sprinkle with cheddar cheese.
  6. Bake for 30-35 minutes until golden brown and bubbly.
