  • 1 lb ground beef or turkey
  • 1 medium onion, finely chopped
  • 1 red bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 1 packet taco seasoning
  • 1 cup medium ground cornmeal
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 (15 oz) can black beans (optional)
  • 2 tsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onions and red bell pepper until softened, about 5 minutes.
  3. Add ground beef or turkey; cook until browned, breaking it apart with a spatula (7-10 minutes).
  4. Stir in taco seasoning, diced tomatoes (with juice), and black beans if using. Let simmer for an additional 5 minutes.
  5. In a bowl, whisk together cornmeal, baking powder, chicken broth, and half of the cheese until smooth.
  6. Grease a baking dish and layer the meat mixture on the bottom. Pour the cornmeal batter over the top.
  7. Sprinkle remaining cheese on top and bake for 25-30 minutes until golden brown.
