  • 1 lb lean ground beef
  • 8 small flour or corn tortillas
  • 1 can (15 oz) black beans, rinsed
  • 2 cups shredded cheddar cheese
  • 2 tbsp taco seasoning
  • 1 cup diced fresh tomatoes
  • 1/4 cup chopped green onions
  • 1/2 cup sour cream
  • Sliced jalapeños (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef until fully cooked (7-10 minutes). Drain excess fat and stir in taco seasoning.
  3. Layer half of the tortillas on the bottom of the baking dish. Add half the beef mixture, half the black beans, and half the cheese.
  4. Repeat layering with remaining ingredients, finishing with a generous layer of cheese.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
  6. Let it cool slightly before garnishing with tomatoes, green onions, sour cream, and jalapeños if desired.
