  • 16 large fresh button mushrooms
  • 8 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley or chives, chopped
  • 1/2 cup panko breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Gently clean the mushrooms with a damp cloth and remove the stems; chop the stems finely.
  3. In a mixing bowl, combine cream cheese, minced garlic, Parmesan cheese, chopped mushroom stems, and fresh herbs until well blended.
  4. Generously stuff each mushroom cap with the cream cheese mixture and place them in a baking dish.
  5. Sprinkle panko breadcrumbs on top of each stuffed mushroom and drizzle lightly with olive oil.
  6. Bake for 20-25 minutes until golden brown and bubbly. Serve warm.
