  • ½ cup grated Parmesan cheese
  • ¼ cup pine nuts (toasted)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Butterfly the chicken breasts to create pockets.
  2. In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant (about 1 minute). Add spinach and cook until wilted. Stir in cream cheese until fully melted.
  3. Combine the spinach mixture with Parmesan and toasted pine nuts in a bowl. Season with salt, pepper, and Italian seasoning.
  4. Stuff each chicken pocket generously with the filling. Secure with toothpicks if needed.
