  • 1 lb large shrimp, peeled and deveined
  • 6 corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup chopped fresh cilantro
  • Juice of 1 lime
  • 1 avocado, diced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 cloves garlic, minced
  • 1/2 onion, sliced
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat dry.
  2. In a bowl, mix cumin, paprika, salt, and pepper; toss shrimp until coated.
  3. Heat olive oil in a skillet over medium-high heat and sauté shrimp for about 3-4 minutes per side until pink and opaque.
  4. Add garlic and onion during the last minute of cooking; sauté until fragrant.
  5. Warm tortillas in aluminum foil in the oven at 350°F for about 10 minutes.
