  • 2 tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 1 cup bell peppers, diced (mixed colors)
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 can (14 oz) whole tomatoes, crushed
  • 4 large eggs
  • ¼ cup fresh parsley or cilantro, chopped
  • ½ cup feta cheese, crumbled (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onion and bell peppers until soft.
  2. Add minced garlic, cumin, and paprika; cook until fragrant for about one minute.
  3. Stir in canned tomatoes, season with salt and pepper, and simmer for 10 minutes until thickened.
  4. Create small wells in the sauce and crack an egg into each well. Cover and cook for 5-7 minutes until egg whites are set but yolks remain runny.
  5. Sprinkle with chopped herbs and feta cheese before serving hot.
