  • 1 cup breadcrumbs (store-bought or homemade)
  • 2 large eggs
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley or dill, chopped
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp oil for frying

Instructions

  1. In a skillet over medium heat, sauté the chopped onion in a splash of oil until translucent (about 3 minutes).
  2. In a large bowl, mix together the drained salmon, sautéed onions, breadcrumbs, eggs, minced garlic, herbs, lemon juice, salt, and pepper until well combined.
  3. Shape the mixture into small patties (about 3 inches wide).
  4. Heat oil in a skillet over medium-high heat and fry the patties for about 4–5 minutes per side until golden brown.
  5. Remove from the skillet and let them rest on paper towels to absorb excess oil before serving warm with tartar sauce or a squeeze of lemon.
