  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • Oil for frying

Instructions

  1. Prepare your ingredients: Drain the canned salmon and remove any skin or bones.
  2. Sauté onions: In a skillet over medium heat, heat oil and sauté the chopped onion until translucent (about 5 minutes).
  3. Mix the ingredients: In a large bowl, combine drained salmon, sautéed onions, breadcrumbs, eggs, parsley, garlic powder, lemon juice, salt, and pepper. Mix until just combined.
  4. Shape croquettes: Using wet hands, form the mixture into small patties (about 2 inches wide).
  5. Fry them up: Heat oil in a skillet over medium-high heat. Carefully add croquettes and fry until golden brown (3-4 minutes per side).
