  • 2 lbs flank steak
  • 2 medium yellow onions, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 4 garlic cloves, minced
  • 28 oz crushed tomatoes (canned)
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Chop the onions and bell peppers.
  2. In a large pot over medium-high heat, add olive oil and sear flank steak for about 4-5 minutes on each side until browned.
  3. Stir in onions and bell peppers; sauté for 3-4 minutes until softened.
  4. Mix in garlic, crushed tomatoes, cumin, oregano, bay leaves, salt, and pepper. Bring to a simmer.
  5. Reduce heat to low, cover tightly, and cook for 1.5-2 hours until beef is fork-tender.
  6. Remove beef from pot, shred with forks, then stir back into the sauce. Serve over rice or tortillas.
