  • 1 can (15 oz) low-sodium black beans, drained and rinsed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Juice of 1 lime
  • 2 tbsp olive oil

Instructions

  1. Rinse the rice under cold water until clear. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onions until translucent, then add garlic until fragrant.
  3. Stir in the rinsed rice until coated in oil. Add vegetable broth, ensuring it covers the rice by about an inch. Bring to a boil.
  4. Once boiling, reduce heat to simmer and fold in black beans along with cumin and chili powder. Cover and cook for 15-20 minutes.
  5. After liquid is absorbed, remove from heat and squeeze fresh lime juice over the dish before serving.
