Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and brown sugar until fluffy. Mix in pumpkin puree and vanilla until smooth.
  3. In another bowl, whisk together flour, oats, baking powder, cinnamon, nutmeg, and salt. Gradually add to the wet ingredients until just combined.
  4. Drop rounded tablespoons of dough onto prepared baking sheets, leaving space between cookies.
  5. Bake for 12-15 minutes or until golden around the edges but still soft in the center. Let cool for about 5 minutes before transferring to wire racks.
