  • 2 cups fresh pumpkin, cubed
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 2 cups low-sodium vegetable broth
  • 2 cups spinach or kale
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Peel and cube the pumpkin. Gather all ingredients.
  2. In a large pot over medium heat, warm oil and sauté chopped onions until translucent (about 5 minutes).
  3. Add minced garlic and grated ginger; cook for another minute until fragrant.
  4. Stir in pumpkin cubes and vegetable broth; bring to a boil, then reduce heat and simmer for 15-20 minutes until pumpkin is tender.
  5. Blend the mixture until smooth using an immersion blender or regular blender.
  6. Return to pot and stir in coconut milk and greens; cook for an additional 5 minutes.
  7. Squeeze in lime juice before serving.
