  • 1 cup bell peppers, chopped
  • 1 cup spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup chicken or shrimp, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable or chicken broth
  • ½ cup heavy cream or ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  2. Add chopped vegetables and protein; cook until vegetables soften slightly.
  3. Stir in pasta and broth; bring to a gentle boil.
  4. Reduce heat and cover the pot; simmer for about 10-12 minutes until pasta absorbs most liquid. Stir occasionally.
