  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain rice
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup mixed vegetables (peas and carrots)
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 1 tsp smoked paprika (optional)

Instructions

  1. Preheat a large skillet over medium-high heat and add olive oil.
  2. Sear chicken breasts for about 5 minutes on each side until golden brown, then remove from the skillet.
  3. Sauté diced onions until translucent, then add minced garlic for an additional minute.
  4. Stir in rice until coated with juices from the pan.
  5. Pour in chicken broth and return seared chicken to the skillet.
  6. Add frozen veggies along with salt, pepper, and smoked paprika. Cover and simmer on low heat for 20 minutes.
  7. Once liquid is absorbed and rice is tender, fluff with a fork before serving.
