  • 1 3/4 cups granulated sugar
  • 2 1/2 tsp baking powder
  • 1 cup unsalted butter (room temperature)
  • 5 large eggs
  • 1 cup whole milk
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp pure vanilla extract
  • 1/2 cup strawberry jam
  • Red food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease three 9-inch round cake pans and line with parchment paper.
  2. In a large bowl, beat the butter and sugar together until fluffy (about 3-5 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, sift together flour, baking powder, cocoa powder (for chocolate layer), and salt.
  5. Gradually mix the dry ingredients into the wet batter, alternating with milk until combined; do not overmix.
  6. Divide the batter into three bowls: leave one plain for vanilla, mix cocoa powder into one for chocolate, and add strawberry jam along with food coloring in the last bowl for strawberry flavor.
  7. Pour each batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool before transferring to wire racks.
