  • ½ cup unsweetened coconut flakes
  • 2 large eggs
  • ⅓ cup vegetable oil or applesauce
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, and brown sugar.
  3. In another bowl, combine eggs, oil (or applesauce), and vanilla extract; whisk until smooth.
  4. Add wet ingredients to dry ingredients; mix gently until just combined.
  5. Fold in grated carrots, raisins, chopped nuts, and coconut flakes carefully.
  6. Spoon the batter into muffin tins until two-thirds full.
  7. Bake for 20-25 minutes or until golden brown; check doneness with a toothpick.
