  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 14.5 oz can diced tomatoes
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • Fresh cilantro for garnish

Instructions

  1. Prep your ingredients by dicing the bell pepper and onion, and mincing the garlic.
  2. Cook the spaghetti in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, add olive oil and sauté onions and bell peppers until soft. Stir in minced garlic for about 30 seconds until fragrant.
  4. Add the ground beef to the skillet, breaking it apart as it cooks until browned. Sprinkle taco seasoning over the meat mixture.
  5. Stir in the diced tomatoes along with the drained spaghetti, combining everything gently for about 2 minutes.
  6. Top with shredded cheddar cheese while hot so it melts beautifully. Garnish with fresh cilantro before serving.
