  • 1 lb ground beef or turkey
  • 1 can (15 oz) canned black beans, drained and rinsed
  • 1 can (14.5 oz) Mexican-style diced tomatoes
  • 2 tbsp taco seasoning
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 cup bell peppers, chopped
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a medium saucepan, cook rice with 2 cups water until tender.
  3. In a skillet, brown meat over medium heat. Add chopped bell peppers and cook for 3-4 minutes.
  4. Stir in black beans, diced tomatoes, and taco seasoning; simmer for 5 minutes.
  5. Layer half the cooked rice in a baking dish, followed by half the meat mixture and half the cheese. Repeat layers.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until bubbling.
