  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • Salt & pepper to taste
  • 2 cups pasta sauce

Instructions

  1. Preheat skillet over medium-high heat. In a bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix gently until combined.
  2. Shape mixture into 1-inch meatballs using wet hands. Place on a parchment-lined baking tray.
  3. Sear meatballs in the hot skillet until browned on all sides (about 8-10 minutes).
  4. In another pot, bring chicken broth to a boil. Add rice, reduce heat, cover, and simmer for 15-20 minutes until fluffy.
  5. Pour pasta sauce over seared meatballs and let them simmer on low for about 10 minutes.
  6. Fluff rice with a fork before serving. Plate meatballs on top of rice with extra sauce if desired.
