  • Zest of 2 lemons
  • 1 tsp vanilla extract
  • 3 large eggs, room temperature

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until golden brown. Let cool while preparing the filling.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar, mixing until well combined.
  4. Add sour cream, lemon juice, zest, and vanilla extract; mix until smooth.
  5. Beat in eggs one at a time, mixing gently to avoid overmixing.
  6. Pour the filling over the cooled crust and bake for about 50-60 minutes until set but slightly jiggly in the center.
