  • 1 cup chopped pecans or walnuts (lightly toasted)
  • 8 oz cream cheese (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a mixing bowl, beat butter and sugar until light and fluffy. Add eggs one at a time.
  3. In another bowl, sift flour, baking powder, and salt. Gradually add to the butter mixture, alternating with buttermilk.
  4. Fold in coconut and nuts gently.
  5. Divide batter between pans and bake for 25–30 minutes until golden brown.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  7. For frosting, beat cream cheese until smooth, then gradually add powdered sugar and vanilla; whip in heavy cream until fluffy.
  8. Assemble by layering cakes with frosting in between and covering the top and sides.
