Instructions

  1. Soak the Beans: Rinse the dried pinto beans under cold water until clear. Soak overnight in plenty of water.
  2. Cook the Beans: Drain and rinse the soaked beans. In a pot, cover them with fresh water and bring to a boil over medium heat. Cook until tender, about 1-1.5 hours.
  3. Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about five minutes).
  4. Add Garlic and Spices: Stir in minced garlic and cumin; cook for one minute until fragrant.
  5. Mash the Beans: Drain cooked beans (reserve some cooking liquid) and add them to the skillet. Mash gently with a fork or potato masher until creamy yet slightly chunky.
  6. Finish with Broth: Pour in vegetable broth while stirring to reach your desired consistency. Season with salt and pepper to taste.
