Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin with nonstick spray or liners.
  2. In a large bowl, whisk together whole wheat flour, baking powder, and salt until well combined.
  3. In another bowl, mix Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until smooth.
  4. Gently fold in fresh blueberries into the wet mixture.
  5. Combine wet and dry ingredients by pouring the wet mixture into the dry ingredients; stir until just combined to avoid overmixing.
  6. Fill muffin cups about two-thirds full with batter and bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
