  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (any color)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tbsp olive oil

Instructions

  1. Preheat a large skillet over medium heat and add olive oil.
  2. Sauté the chopped onion and bell pepper until softened, about 5 minutes.
  3. Add the ground beef, cumin, and chili powder; cook until browned, breaking it apart as it cooks (7-10 minutes).
  4. On half of each tortilla, layer the beef mixture followed by shredded cheese. Fold over to create a taco shape.
  5. Place each quesadilla in the skillet, cooking until golden brown on both sides (about 3-4 minutes per side).
  6. Slice into wedges and serve warm with salsa or guacamole.
