  • 8 medium flour tortillas
  • 2 cups shredded cheese (Cheddar or Monterey Jack)
  • 2 cups red enchilada sauce (store-bought or homemade)
  • 1 onion (finely chopped)
  • 3 cloves garlic (minced)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Sour cream (for serving, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté chopped onion until translucent, about 5 minutes, then add minced garlic for an additional minute.
  3. Add ground beef along with cumin and chili powder. Cook until browned and crumbly, about 8 minutes. Drain excess fat if necessary.
  4. Assemble the enchiladas by placing some of the beef mixture in each tortilla, sprinkling cheese on top, and rolling tightly.
  5. Spread some enchilada sauce on the bottom of a baking dish and place rolled tortillas seam-side down. Pour remaining sauce over the top and sprinkle with more cheese.
  6. Bake uncovered for 20-25 minutes until bubbly and golden brown.
