  • 1 cup fresh breadcrumbs
  • 1/4 cup chopped parsley
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 large eggs
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground meat, breadcrumbs, parsley, garlic, onion, eggs, lemon zest, oregano, cumin, salt, and pepper. Mix until just combined.
  3. Roll the mixture into balls about 2 tablespoons each.
  4. Place on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown.
  5. Let rest for a few minutes before serving with tzatziki or over rice.
