  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon (Ceylon preferred)
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, melted
  • 1 cup dark brown sugar
  • 1/2 cup unsulfured molasses
  • 2 large eggs (room temperature)
  • 1 cup toasted pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, mix the melted butter with brown sugar until creamy. Add molasses and eggs one at a time, mixing thoroughly after each addition.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. If desired, fold in toasted pecans or chocolate chips.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool slightly before slicing.
