  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp fresh parsley or thyme, chopped
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper.
  3. In a skillet over medium-high heat, melt 2 tbsp of butter. Sear chicken for 5-7 minutes on each side until golden brown.
  4. Remove chicken and lower heat. Add remaining butter and minced garlic; sauté for 1 minute until fragrant.
  5. Pour in chicken broth and lemon juice; simmer for 3-4 minutes.
  6. Return chicken to skillet, coating with sauce. Transfer to baking dish and bake for 20-25 minutes until cooked through.
