  • 1 can (28 oz) high-quality whole tomatoes
  • 1 cup heavy cream
  • 1 cup fresh basil leaves, torn
  • 4 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta al dente in salted boiling water; reserve some pasta water.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant.
  3. Add canned tomatoes (with juice) and simmer for 10–15 minutes until thickened.
  4. Stir in heavy cream and simmer gently for 5 minutes.
  5. Mix in torn basil, salt, and pepper.
  6. Combine the drained pasta with the sauce, adding reserved pasta water if needed for creaminess.
  7. Serve hot with extra Parmesan on top.
