  • 8 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tsp Cajun seasoning
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 cup bell peppers, chopped (red and yellow)
  • 2 green onions, sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt to taste

Instructions

  1. Boil a large pot of salted water. Cook fettuccine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, melt butter with olive oil. Add shrimp and sprinkle with Cajun seasoning. Cook until pink and opaque (about 2-3 minutes per side). Remove shrimp from skillet.
  3. In the same skillet, add bell peppers and minced garlic. Sauté until peppers soften (about 1-2 minutes).
  4. Lower the heat to medium-low. Pour in heavy cream while stirring gently; let simmer until slightly thickened (about 3-4 minutes).
  5. Return shrimp to the skillet, fold in cooked fettuccine, and mix in Parmesan cheese until well combined.
  6. Garnish with sliced green onions before serving hot.
