  • 2 cups all-purpose flour
  • 1/4 cup unsalted butter (cold)
  • 1 packet (2 1/4 tsp) active dry yeast
  • 3/4 cup whole milk (warm)
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 1 cup dark chocolate chips

Instructions

  1. Combine warm milk and sugar in a bowl; sprinkle yeast on top and let foam for 5 minutes.
  2. In another bowl, whisk together flour and salt; gradually mix in the yeast mixture to form a soft dough. Knead on a floured surface for about 10 minutes until smooth.
  3. Shape dough into a ball, place in a greased bowl, cover with plastic wrap, and refrigerate for at least 1 hour.
  4. Prepare a butter block by rolling cold butter between parchment paper into an 8×6 inch rectangle; chill again.
  5. Roll out the dough into a large rectangle, place the chilled butter block in the center, fold edges over to encase it completely.
  6. Roll out into a long rectangle; fold into thirds like a letter. Wrap and chill for 30 minutes. Repeat this process twice more.
  7. Roll out laminated dough into another rectangle, cut triangles (about 4 inches wide), place chocolate chips at the base, and roll tightly from base to tip.
  8. Place croissants on lined baking sheets, cover with a towel, and let rise until doubled (about an hour). Preheat oven to 375°F (190°C).
  9. Brush with egg wash before baking for 15-20 minutes until golden brown.
