  • 46 fresh green chiles (or canned), diced
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 3 cups low-sodium chicken broth

Instructions

  1. Heat oil in a large pot over medium heat. Sauté the onions until translucent; add minced garlic and cook for an additional 30 seconds.
  2. Increase heat to medium-high and add pork chunks. Brown on all sides to enhance flavor.
  3. Stir in diced green chiles, cumin, and oregano, cooking for another minute until fragrant.
  4. Pour in chicken broth to cover the meat completely. Bring to a boil, then reduce heat and let simmer for about 1.5 hours until pork is tender.
