  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 can (15 oz) black beans, rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat olive oil and sauté onions until translucent. Add minced garlic and cook for another minute.
  3. Stir in diced chicken breasts along with cumin and chili powder; cook until golden brown (about 5-7 minutes).
  4. Mix in black beans, corn, and diced tomatoes; cook until heated through.
  5. In a large baking dish, layer tortilla chips as the base. Top with half of the chicken mixture and half of the cheese. Repeat layers.
  6. Bake for 25-30 minutes until bubbly and cheese is melted.
