  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup sweet Marsala wine
  • 8 oz sliced mushrooms (button or cremini)
  • 1 cup low-sodium chicken broth
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the garlic and slicing the mushrooms.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper, then add to the skillet. Sauté until golden brown on both sides (about 5 minutes each). Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sliced mushrooms; sauté until tender (about 3-4 minutes).
  4. Deglaze the pan with Marsala wine, scraping up any bits from the bottom. Simmer for 2 minutes until slightly reduced.
  5. Stir in chicken broth and butter; bring to a gentle simmer. Return chicken to skillet and cook for an additional 10 minutes until fully cooked.
  6. Serve over creamy mashed potatoes or pasta, drizzled with sauce and garnished with fresh parsley.
